Nice color. Best way to cook those is to hang it, preferably indirect.

They were so delicious I couldn't stop eating them.


Indirect pit temp 275 one hour.


Braised in covered foil pan with the Chinese Ribs sauce and half a beer one hour.


Finish over the coals mopping one each side just enough to put a little char on the pork.


Outrageous.
