Rubbed, topped with 8 fresh habanero, jarred jalapeƱo, onion, garlic, sweet pepper and seasoned with my little brothers dehydrated hot peppers from last year.  Two normal racks for the family.  inspired by a Quincy Jones recipe.

The plan this time will be to start off wrapped so the ribs marinate in the peppers for the first hour and a half. Hot and fast. Then unwrap and cook for awhile. Not really sure yet. I'm making this one up on the fly.

No chimney or lighter cubes or gas assist required. Just 4 of my diy lighter cubes that are completely free. No problem starting used coal either as in this case.

This is after an hour and 40 minutes of 450-500 wrapped. Only one rack has hot peppers. Closest to the edge. The other two are sweet peppers. I think! Lol

Had a little old Thai lady tell me if it's too hot eat a small spoon of sugar or drink something really sweet.

She was a cook in a Thai market we used to eat at that was a grocery/restaurant in the back. It was in the hood but the best fresh Thai in town. Sadly her husband passed and she sold the store. She would grind the peppers fresh daily and make it as hot as you could stand it.

That was way more painful than I anticipated. Great texture and flavor but extremely hot. Even with the peppers scraped off.

Yeah, she is right. I've been experimenting making hot sauces lately and I'm amazed how some sugar, honey, and fruit can tame the hottest peppers in a sauce.

I'll be paying for it today. Lol

They are just paper towels used to wipe out grease and oil from my skillets. I fold them up and save them in a ziplock.
