Double bacon weave stuffed pork loin.

Opened up this good sized loin, not to long ago. Stuffed it with habenero, raspberries, manderin oranges, and smoked sausage. Next time I would leave out the oranges. Splashed some Tony's on the outside.

I'm doing pretty the same however stuffing the loin with dried plums soaked in apple juice and at approx. 150f putting a vinegar honey glaze with roasted onions.

Forgot one thing. To keep the moisture, besides dried plums I'm stuffing it with butter.
