Cant see the color change but is always fun to watch, and the Salmon was good

Yes on the parchment, skinless, Tami marinated it, and made a finishing sauce for it as well. I will have to ask her on the recipe. indirect the whole time till it looked and felt right maybe 15-18 minutes covered 3/4 load of KBB wide open the lid handle was hot LOL

Parchment is a great idea. I bought two massive rolls of it from sams a long time ago and always forget to use it lol. This will give me another option. We are due for a salmon cook.

I don’t know if I’ve ever seen a cook posted on a Woodale 18. Very cool.

I love using parchment, especially on skinless fish, heat transfers thru no mess no mangled fish

Looks great Joe, salmon is fantastic. And I love your little Wood Dale. Know what you mean about the lid handle, I've done it too lol.
