Nice cook and getting back on the horse. I keep a journal of cooks (after loads of research) that way I can keep track of temp, tastes, rubs, smoke profile, texture and tweak the process to hit your sweet spot! Everyone has there own tastes but when you find yours and you have a play by play it's much easier. Keep on smokin!

Used indirect, temp about 275-300....little too warm but 3-4 hours these babies turned out incredible...used hickory chunks too...great smoked flavor...used some American Royal beef seasoning, it went very well
