Hi,
On a YouTube video I saw someone state not to soak the wood chunks when you throw them on top of the charcoal.
But recently I’ve seen a few recipes including ones from bbq restaurants where they state soak the wood for about minimum 2hrs.
I use wood chunks that’s about 6-12cm thick/wide.
Any idea which is better or which is true?

I never soak chunk. If I only have chips... I do soak. Thought being that dry chips burn really quick when dry. BYW - I much prefer chunk for my cooks.

I always use soaked chips...but I e decided to try out chunks again...

Don’t soak the wood. Not necessary. Moisture burning off the wood is not the good smoke you want on your food

I use chunks and no soak. I will soak wood chips before using them to keep them from burning to quickly. I’ve never noticed any problem with soaking.
However, I never use chips anymore. Just dry chunks.

Another vote for dry chunks, no chips. Even if I still had a gasser, I would go with the A-MAZE-N tube and pellets to add smoke.
