Just a few photos of Tuesday's ribs ;-)
2 hours and 10 mins and almost picture perfect, and they taste the part also!

what kind of temps do you run for a hot and fast cook?
Its amazing how quickly one weber kettle turns into more than a dozen!  Always open to grabbing something interesting so let me know what you've got!

I use my S'nS and maybe around 3/4 chimney and let it rage for 1 hour at 475-500f sprayed with apple juice every 10-15 mins.
Then wrapped in foil for the next hour with a 2-3 shots of apple juice in the pack.
Then out of the foil and back on the grill with your favorite sauce for the last 10-15 to glaze them up.

No!
Sorry bout that.. should have been clearer on the temps.
Euro MT with the lid vent over the ribs away from the S'nS and the Weber lid thermometer above the coals.
Also.. use your favorite smoking wood if you want.
Never thought about what the indirect side temp is.. don't really care.. ribs are always good this way. ;-) I'll chuck the iGrill in next time to find out.

Gotta try that for a weekday cook. Are you using water in the SnS reservoir?

No water in the SnS on HOT cooks!
This would boil and splash out in 30sec. This is also why I spray with apple juice for the moisture and the glaze it leaves. Some times I put a small shot of apple cider vinegar in the apple juice. ( 1-2 tbls max )
The rest of the apple juice mix goes in the foil with the ribs after the 1 hour.
