Picked up a CGA for $15 on Friday. Saw these on sale on Saturday. Why not try a low and slow first cook?
About 6 briqs in the mini chimney and a firebrick buffer
Filled one side of the CGA with lump and off she goes
After about 3 hours of temps between 200 and 250, they were probing around 170 IT, so they got foiled with chicken stock, garlic and onions
After another 2 hours in the foil, probing around 195, but not quite fully probe tender
After another hour in the foil and a little rest, these things pulled beautifully. The CGA worked like a champ. Temps held steady even with a bit too much lid lifting by yours truly. I had to add a few briqs for the last hour, but I blame that on user error, as I didn't have the lump packed very well. With a well-packed fuel chamber, the little bugger could probably go 6-7 hours without a refill.
