I believe the aroma of those caught the jet stream last night and made it to Doraville and they smelled delicious

I basically used the technique and recipe troy used on his YouTube burnt end cook, just used my wsm as opposed to a kettle with sns and dng set up

That looks great. Pork belly is delightful. Did you try a piece before the sauce?  I think my favorite pork belly bites are with seasoning and smoke only. They are incredible.

I did try before sauce and enjoyed them as well and honestly should have done half sauced and half not... that's the joy of cooking for me though, every cook is a lesson and opportunity to learn and grow. Happy grilling
