Here is a quick recipe for Salsa Borracha
Made this past Sunday for some carne asada tacos on my Weber Performer Platinum
Ingredients:
Basic Mexican salsa items
- Red Tomatoes
- Jalapeños (have fun here, experiment mix & match with habanero, Serrano, ghost peppers, etc)
- onion
And Cerveza!!! About half a can (drink other half) any kind you like!!!
- char all vegetables (cave man style) directly on ashed over coals
- place cooked vegetables in to Molcajete (Mexican rock manual blender), grind till you reach desired salsa chunkyness (is this a real word?)
- add SPG to taste
- return all to Olla de barro (pottery sauce pan)
- add the beer
- let simmer while cooking the carne asada
- grab tortilla, add carne asada diced, pour plenty of salsa over meet
- Enjoy!!!!
- drink more Cerveza
