Couldn't pass up the store's display case full of corned beef. Rubbed with mustard and butcher pepper. Smoked indirect until 165, then foiled and finished at 195. The Berkel slicer is one of the best purchases I've ever made.

I'm waiting till the 18th to buy my corn beef when they are .99 a lb. then I will make my Pastrami!!

I've done two small 4 lb ones this week.  they're so easy and have been on sale for $1.67lb (or something like that)

So easy. Super delish. 

Did you soak yours?

I just rinsed mine off and patted it down with paper towels and then generous coarse black pepper, smoked between 225-275 til 165, then wrapped til 190.

Foolproof.   Hit a stall at 160.
