Memphis style dry ribs

First smoke on my new WSC.  Hoooo-boy am I pumped. She’s been holding at 250* like a boss. Will keep posting pics as they come along.

2 hour mark. They smell great and I’ve only slightly adjusted the vents. Smoking with cherry wood.

My new Summit is cruising steady at 250 also. What were your vent settings? I'm just left of "smoke" on the bottom and half open on top.

Top vent was big enough for a #2 pencil and the bottom was right of smoke. My back deck is such that I don’t get a lot of wind/air movement. I did have to adjust them as my cherry pieces caught fire, seemed to spike a little, but nothing major. Temps were around 235-275. I used weber briquettes and 3-4 cherry blocks
