Well it warmed up a bit just in time for christmas so I thought I would take advantage and do up apps. I'm hoping the kettle will keep the temps for wings. The wings were freezing to the cookie sheet before I could get them on the grill

Thanks guys, they were alright. Nice crunchy skin with a good smoke taste but they were a bit bland. My son sprinkled some lemon pepper on some and then some franks red hot sauce on some. The hot wings were good but just tasted like wings and franks red hot sauce. I need a good hot wing recepie with a bit of character that is not too hot. If anyone has one they would like to share that would be great.

Toast black peppercorns and guajillo chiles. Then buzz them up in a spice/coffee grinder. Add garlic powder. Add a teaspoon of baking powder.

Salt the wings, then add the rub. Cook. If the wings are not hot enough, add cayenne the next time.

Or, just repeat what you did this time, but melt a stick of butter and whisk in the Franks. Toss the wings in the butter and Franks sauce
