Dude there's probable a couple  thousand tiny little fish eggs in the sac.  Have you ever seen caviar or the tiny fish eggs they put on sushi? Same stuff.

Oh okay, I didn't realize they were in a sac like that. I know/knew what roe is guess I've just never seen it in a sac like that, only feeling a little stupid right now

Man you don't know what you're missing. The best parts  of almost any fish  other than the belly  are the roe, head and eyes. If you eat chicken eggs then you shouldn't have any problem eating roe. It's very nutty and creamy.

The first pic fish head looks scary but the video clip cooked fish without the head look so good.
