Omelette with smoked sausage and toast...

SMOKE FREAK

Toasted some buttered and salted bread and hit it with some shredded cheddar...
Heated up some sausage that I smoked a couple days ago...
And four eggs beaten...seasoned with salt and chipotle powder...
Then the eggs get some fresh chives and shredded cheddar...


Toast is done and the eggs get folded...


And served with some fresh tomatoes...


Nothing special but it was damn good...

Coulda used more cheese...
The trick was not overheating the CI and browning the eggs...

That is a fine looking omelette, and give total respect for getting that skillet heated just right to make the eggs perfect like that as you mentioned.
