Beer Brined Wings

I have been wanting to try a beer brine for a long time and came across this one

I didn't have peppercorns, (used a Tablespoon of ground pepper) didn't have all spice berries, (made my own all spice with equal parts of ground nutmeg, cinnamon, cloves), and used 1/2 teaspoon. I didn't have a Lemon so I used a Lime. Brined over night, (about 22 hours), in a gallon zip lock bag, turning the bag over several times. Rinsed them off, patted dry, and dusted them with Plowboys Yardbird.

Fired up a full chimney of Royal Oak Briquets, and poured them over some used Weber Briquets, Put the middle section of my WSM on the Performer without the water pan, and let it go with the lid off the whole time. The fire was really hot, maybe too hot! Flipped the wings several times during the cook to try and avoid burning them, while trying to take pictures.

The brine added extra moisture and gave them a nice flavor. Will do this one again.

They didn't take long and I never really timed them. Maybe 20 or 30 minutes? I checked with Thermopen and they were around 180*

That looks like an awesome and fun cook. The wings look perfect. Crinkle cut are my favorite too.
