‘84 Gas pedestal Kettle help

Hey all, first post so be gentle please.  :)

I have many charcoal kettles but have managed to get an '84 redhead gas pedestal kettle and was wanting any information on these that was available. I am looking to restore and was hoping someone could help with disassmebly / reassembly of the central burner dish? Not sure on correct terminology. Still has original hose and regulator so i assume that will be the first thing to replace even though it has no sign of deterioration. I was also wanting to know the correct setup with the volcanic rocks for cooking. Any assistance would be greatly appreciated.
