Sorry to bump such an old post but I'm cooking my first Tri Tip this weekend. I was at Ottomanelli & Sons at 285 Bleecker Street in Manhattan/West Village. They had a case full of Tri Tips at $9.99 lbs so I bought one.

Yeah, we're spoiled out here with $2.99 choice untrimmed max-packs. I'm a California native that lived a few years in New Jersey. I can attest...with the exception of Whole Food's, a specialty butcher, or the pre-marinated ones at the Trader Joe's in Princeton...it was seldom seen. I maybe cooked 2-3 tri tips whilst in NJ over the course of 4 years.

One of the best videos on how to cook a tri-tip (the way I prefer) is the YouTube video on the allthingsbbq channel..."Grilled Tri Tip Steak Sandwich w. Tomato Jam." He sears it hot, both sides, then moves indirect to finish. 90-95% of the tri tips I have ever done have been cooked this way (I also love the Oakridge Santa Maria btw...its a little different than Suzie Q's, but really good). A lot of people are reverse searing these now and that's fine...I just like a nice char on the outside from the initial sear. Entirely up to you how you want to roll. Have fun!

First Tri Tip was a success. Here are some pics. Full story to come. 

Seared at start than indirect. Took it off at 145 and let it rest 20 minuets.
