Finnally found spare ribs on sale woohoo!  Made two racks with my own rub.  Turned out great.  One of my better efforts.  What surprised me is that they were done way ahead of schedule.  Started at 9:00am cooking around temps of 240-270 To my surprise by 12:00 they were ready to be wrapped.  The problem was my company was not due till 3:00.  Staying calm I just pulled them off and tented them in foil till 2:00 then wrapped them to cook till 3:00.  Worked out just fine.  I was stunned because usually it takes a good 5-6 hours for spare ribs.  I learned you just need to keep a watchful eye and go by instincts.

Wow! Who would had thought spares would be done that early. That's crazy. Glad it turned out all good, Dave! I really like the color of them.

Great looking ribs! Way to keep your head when the ribs were ready to wrap earlier than you planned--better they were done early than late.
