My First Try at St. Louis Ribs
« on: August 28, 2017, 03:39:55 PM »
My mom and mother-in-law are traveling out of the country for two weeks, so my wife and I thought we'd treat our dads and some other family to a rib dinner yesterday. I picked up two St. Louis style racks (buy one, get one free at the Jewel) and gave them a shot.

Seasoned them with the Chicago G2G recipe I found on here earlier this summer:

Smoked them for two-and-a-half hours:

Temps stalled at just under 160 degrees so I wrapped them in aluminum foil, pouring a little beer (PBR) over them before covering:

Put some homemade jalapeno honey barbecue sauce on them and, after four and a half total hours, the final product:

I'm far from a rib expert--this is my first summer seriously cooking them (I call it my "freshman year")--but they turned out well. Probably could have stayed on for another half-hour or so, but very delicious.
A man who has an experience is never at the mercy of a man who has just a theory.

Great smoke ring and they look delicious. That sauce sounds really good. Quaker steak has jalapeņo honey wings that are great.

Those look perfect.  Love seeing the bones separate like that.  Nice smoke ring too!
