Roti aldi butt

Aldi has boneless pork butt in a net. I've had it and it's very good. I've always thought it would lend itself to roti nicely since it's in a net. Tonight I'm trying it out. Hot and fast. I have no idea how long but roti stuff seems to cook quick. I'll put some beans under in awhile.

Thanks fellas. It was incredible. I used a salt and pepper rub first, then dusted with swamp boys rub. In 4 hours, the internal was 170 but it was also 10 pm.  I pulled them and sliced thinly. It worked out well. I was planning to take internal higher but we were hungry.

Late into the cook and a few too many beers, I dropped the lid [emoji35]

I change the mac and cheese recipe each time. My advice is to Google some recipes and pick the one that sounds best. This particular time I melted half a stick of butter, added a little milk, added roughly a cup of cottage cheese, 1 cup sour cream, 1 1/2 pound sharp cheddar, 3 or 4 pepper jack cheese sticks, a tablespoon of franks, salt and pepper. Heated up and added noodles cooked aldente, added to cast iron and cooked indirect for roughly 45 minutes at 350ish. I added applewood but next time I may go no wood. My family prefers minimal smoke on this dish. I topped with paprika and Parmesan before I put it on. 4 cheese minimum seems to be a winner.

The boneless pork butt is great. You have to be a little careful not to dry it out since it's boneless but this aldi pork seems to cook quick and always tastes great. I finish with a touch of Carolina vinegar sauce. Nobody realizes anything was added but they always love it. I like the subtle flavor that a splash of vinegar sauce adds.
