I am also doing the ribs. More rain coming down now, but still doable.




Using my wireless Napoleon Temp gauge to keep tabs on the cooking grate temp. Steady at just over 300f for last 45 min.

Almost 1.5hrs in.  Maybe another 1hr to go before I sauce.




2hrs in. Pic before I sauced it. Maybe I sauced it to early as I want to let it go for another 30 min. We will see.




All done. It was great!
