Thanks guys. I'm a manager for the Food Services department at a local hospital. Before that I was a Chef at Harrah's, and Trump Casinos and Marriott Hotels. I've been in the business for 25 years but started grilling more regularly about 10 years ago. I'm still just learning mostly by trial and error.
