Both are wrapped in a pan. Belly is wrapped with honey and butter and I will say that if you haven't done pork belly, go to the store right now. Absolutely incredible and I'm only halfway. It was so good I debated to glaze or not. Just incredible goodness.

Thanks fellas.  They were both very good. I picked the pork belly up at Costco. All they had out was belly that was sliced in half inch strips. It was unbelievably good before I wrapped and later glazed. It was good sauced but I think I liked it best with just rub and smoke. I made both of these for a pitch in at a friends house. It was all eaten very quickly. The youngsters that were there ate them up. I don't think they even knew what they were.

Charcoal set up:  I took a lower grate out of an 18 kettle and placed it over the charcoal grate of the wsm perpendicular. It fit perfectly inside the ring. I then filled the ring about half full with royal oak lump. Lit some and put in the middle with some cherry wood. This set up ran 250 the entire 4.5 hours.  After shutting down I still had half left. Very little ashes and hadn't come close to needing stirred or clogging airflow on the charcoal grate. I'll never use kbb again in the wsm. Also, I think the food tasted better but maybe that's in my head?  Anyways, I'm a huge fan of ro lump now.

I don't know. I've never cured anything before.  Maybe something I'll try at some point.

Belly is not readily available in these parts!  I had to order one.  Can't wait to make some BACON!   How much are you paying for belly?
I ordered it at the Farmer's Market, at a whopping $6.99/lb!!!   I forget to pick it up so I went to my butcher.  They have it for $3.99/lb, so I ordered 5 lbs!!
As soon as I get home, the first Farm calls me tells me it's coming in Saturday...   Guess I'll have some really expensive bacon!  The side by side taste test had better be phenomenal!!!
