Has anyone built an Arduino temperature controller?

I love building things myself and getting that sense of accomplishment. So as I was researching temp controllers, I started thinking that it really should not be hard to build a basic one with an Arduino (in case you are not sure what an Arduino is https://www.arduino.cc/). I found a couple of articles that are pretty detailed about how to build one (https://create.arduino.cc/projecthub/dbarbee/temperature-controled-charcoal-smoker-58db49). Not sure if I am going to go down this road yet since I don't have a ton of free time right now due to work.

Has anybody here built one? If so, how accurate is the thermometer? How much time did you spend on building it and tweaking the fan speed/time?

I have not done this but it sounds like a fun project.    Now you got me interested in looking into it.   Basically it looks like it's using the controller, to control airflow via a small blower.   I would be interested to hear about your progress, if you decide to proceed ahead.
