This is a take on a steak sandwich recipe the lovely wife sent me a couple of days ago. When she sends a recipe it means I better get crackin'.

The burger starts with the buns. It's not really a burger without a bun, and as it turns out, buns are just flour, yeast and some other stuff. They say the proportions are important, but I think it's more about feel. This dough feels good!

And after a few minutes in the oven (the buns, not me) I told her my buns looked good. And, surprisingly, smelled good too! (She often complains about the opposite...?)

Then, as a modern hunter-gatherer does, I went hunting and gathering the rest of the ingredients: Avocado, Roma tomato, half a red onion, the juice of a lime, garlic, cilantro, salt and pepper. Plus sour cream and hot sauce for the bottom of the buns. Oh, and some 80/20 beef that's been through the wringer.

You can't hardly make a burger without some kinda fire, so I fired up the Copper SSP. Half a mini chimney on top of whatever fuel was left, and a couple chunks of hickory ought to do.

Back to the beef. I used @Travis' method (without permission, so a law suit may be imminent) to separate the ground meat, added some salt n pepper, a bit of my home made rub, and then formed into loose patties.

Burgers went on indirect for a bit to soak up some of that burnin' hickory. While that happened was also a good time to heat up my buns - a little butter spread on them and then over the coals.

Gotta get a good sear on the burgers, or it just ain't right.

Healthy dollop of spicy crema on the bottom.

Followed by a burger, and a healthier dollop of the avocado mixture (some would call it guacamole, but I'm fresh outta chips.) There, were, of course, some adult beverages consumed throughout this adventure!

And there you have it. Avocado and Spicy Crema Burger!

And they were as tasty as any burger I've had in a long time. Thanks for looking!

Looks great, Brian. Definite props for making the bun!
No lawsuit this time. We can settle out of court for a beer down the road sometime..
