First Ever Spatchcock Bird

I just got my Performer last July and have only been cooking over charcoal since then, but i cant imagine cooking any other way.  Just did my first spatchcock chicken for mothers day, turned out wonderful.  Simple recipe: olive oil, salt, pepper, rosemary, thyme, and parsley. Cooked over RO lump for about 90 mins.  Delicious!

Welcome to the club and great first post. I think spatchcock is the easiest way to do birds. I've done the rotisserie and I think spatchcock is less prep, setup, cleanup and just as good. Your cook sounds just like mine except I switched to briquettes. When you get some time post some pics of the performer. You'll like it here.
