I turned an 'oh crap, it's getting late were still at the park and no plans for dinner!' panic into my Burger Month Entry.

That's what I love about grilling burgers, they are quick, versatile and delicious. Within 35 minutes from arriving home from the park, I had burgers on the table for dinner!

To me burgers are all about the toppings. Keep it patty itself simple. Some 80/20 chuck, salt and pepper. Nothing else.

The toppings? Oh that is where the fun and versatility begins!

Kid wants just ketchup and bacon (defiantly no pickles!)? - done!

Wife wants a basic burger with cheese, lettuce and tomato? - done!

Me? I'll have mine with bacon and sautéed mushrooms and onions - done!

So how'd I get this from idea to plate in 35 minutes?

Started the coals, and assembled all the fixings

Started off by cooking the bacon in the cast iron for 3 or so minutes over direct heat

Moved bacon to indirect(ish) heat and placed burgers on grill flipping after 3 minutes

At the flip I added the mushrooms and onions to the cast iron next to the bacon. Cooked burgers 3 more minutes, added cheese cooked another minute.

Now for toasted buns a lot of people use butter, I'm here to tell you there is a better way - mayo! It gets the bread nice and crispy (works wonders for grilled cheese and tuna melts too)

There you have it, 3 amazing burgers all made to order by Chef Dad.

Heck ya! Great lookin' burgers, man! Perfect toast on that bun. Will have to try the mayo next time, and looks like you got some serious approval from the boy! Great job.
