Easter Lamb with crash hots and coleslaw

For Easter this year I made a Garlic and Rosemary boneless Leg of Lamb roasted on my EE Kettle. Crash Hot baby red potatoes roasted on the 72 Kettle.

, These are actually quite easy. I wash up some small red potatoes and pierce them with a fork. Then I toss them in the microwave for 4 or 5 minutes. Just long enough that they start to soften but are still firm. Then they are placed on a baking sheet where i crush them with a potato masher. Not too hard as you want them to stay together. i drizzle the potatoes with olive oil or melted butter and season with salt and pepper. You can also add what ever seasonings you want such as roasted garlic powder, rosemary, oregano etc. I then transfer them to a hot grill for indirect cooking. 15 to 20 minutes works best. You want them to be crispy and lightly browned on the outside and light and fluffy inside.

, I am glad you are enjoying them. These are not an invention of mine. The only thing I did was figure out how to make them on the grill. The real credit goes to Australian food writer Jill Dupleix. She created them. I actually ran across them on The Pioneer Woman web site of Ree Dummond.
