Just my wife and I today. Ribs and pork steaks! The Orphan is packed. Using hickory chunks for smoke and a single "char" basket with about 8 briquettes to start.

...about 2 hrs in, I don't even bother with a digital anymore on the grate. When she settles in, she is within -15 or 20° of the grate temp...

Double foil, just a spritz of 50/50 water and apple cider vinegar.

I am loving the new side table I made from my roached out 18. Going to rest everything now for an hour before the reveal... Happy Easter everyone!
