Pork chops and pinwheels

Pork chops and pinwheels going on. Chops dusted with a nice rib rub I get from the farmer's market. Pinwheels treated with kosher salt and cracked pepper.

The pinwheels are a contraption from the local butcher. He takes a flank steak, runs it through the tenderizer. Then he lays it flat and spreads a layer of ground pork on it. It's rolled up, then skewers are put through the roll. It's then sliced into hamburger-size pinwheels. Delish!

Pinwheels around here are the same but with bacon. Either way they are good! Some people marinade in Italian Dressing but we just salt, pepper, garlic and onion powder.
