To Marinate or Not to Marinate:

I grilled my first steak, a Ribeye, a month ago. It was marinated in a bag with the meat.

I didn't like it...it was too soggy.  A week later I grilled a T-Bone with no marinade, just kosher salt.  It was much more "steak-like" to me!

I will no longer marinate my steaks!

Less is more... absolutely.

I use Montreal Steak seasoning, which is basically coarse salt and pepper. Spray a little bit of olive oil first just so that the rub sticks, add seasoning (or just salt and pepper), wrap in plastic, let it sit for no more than 30 minutes, grill. A nice cut of steak with meat juices will be better than any marinade.

A good steak needs to marinade, just salt and pepper.
