Coulda kept that last bit to yourself.. that hurts. Try some lump charcoal. That might clean up any weird taste she might be getting.

Not sure what fuel you use but Stubbs burns real clean, super clean. My wife unfortunately is not a big fan of the smoke flavor. The last spatchcock bird I did was just Stubbs and she said it was the best chicken she's ever had. Ribs today will have a light smoke.

@mcg0958 , i make a standing rib roast every Christmas and do it without smoke, as several of my visiting family members don't really care for smoke flavor on their food.  the rib roast still comes out fantastic when done on the grill.  i recommend you give it a go next time.  your wife will not be disappointed.  nonetheless, the roast you cooked looks top-notch.
