Delicious. Used a Carolina rub and sauce and loved it. Also injected with Italian dressing and apple juice.

No wrapping. Trimmed the fat cap to 1/8 inch. Injected night before and mopped every hour.  On the second hour of mopping , I flipped the pork back and forth ,  to get a good even bark all the way around.
