1st attempt at smoked cheese.

My son ordered some stuff on Amazon for me and found a good deal on a smoke tube. Not THE brand, but a nice one nonetheless.  Loaded it with cherry pellets and put it on the bottom grate.
Loaded my cheese on a cooling rack placed over a tray of ice.
Temps held great in the shade...spiked at 93 once and I replenished the ice.
Let it smoke for 4 hours, then packed it in freezer bags,  squeezed all the air out i could.
Now. ...the waiting...

Before...so I knew what was what.


On the grill


After 4 hours (flipped at 2 hrs)


Packed for the eternity of fridge time lol.


I put all the blocks together and wrapped in foil, then into a gallon freezer bag..

I'll update when I get to try it.

Looks great! I've wanted to try to smoke some cheese, also. No you've given me some inspiration. Really does look great.

I think I may give it a try once the temp drops... It has been in the mid 60s in Northeast Ohio

It was 70 outside here when I smoked it....sat the kettle in the shade....I'm sure vaccum sealing would be best, but I improvised....and yeah...the wait is killin me haha

You don't need a vac sealer. You can use the water displacement method. Fill your sink or a tub with water. As you sink your bag into the water, it will displace the air. It isn't 100% perfect, but it's close.
