.... on my 3rd gen Black Performer.  Well! next time I cook on it will be transformed into Dark Green Performer. I will fondly remember and miss you great deal as you were my first Performer love as a black P. I honestly love this classic jet black, but time for change regardless.



The last supper as a black Performer. Argentinian style Asado beef short ribs marinated in a simple lemon juice, salt, and pepper only.






I cooked them on high heat similar to fast cook pork ribs. Not ideal but only had 1.5hrs to time it for the dinner. Had to rush to get it done. Still came out good.

But green will be awesome.  Especially if you replace that table top with wood.  The combo will looks great.

How did you like these GreenDude? Only time I did country style ribs they were tough....too lean for my liking.

You do have 1 Black to keep around right? But for a Ranch I have 1 of each in Black.

They were good but kids did not like the heavy sweet maple smoke flavor. I think the beef short ribs are lot different than the country style ribs. They are tough part of the meat but not lean at all.  Best way to cook them so far for me was to have butcher cut them 3/8" cross cut in Flanken style. Korean style marinate over night and grill over hot fire. Next time, I will use my new 12" or 14"CI dutch oven inside the kettle.

Yes I do have 2 black 18", 3 black 22", and I think like 3 or 4 black SJ and SJP. I would keep this Performer as is but no more  room to keep another  one.

I will miss my black performer.  Here is one last pic.

The cook looks great!! It is sad to say goodbye to an old friend. I'm about to let my black Gen 2 go for a new sweet Weber Blue Performer. When you get the bug, you get the bug...
Multiple kettles and WSM's. I am not a collector, just a gatherer... and a sick bastard.
