Guess I'll have to start looking for used stainless steel. Looks like you have access to a brake to bend those lips.

Back to your brisket / how high are you bringing up the temperature? Last time I made one I ran her up to 200.

I am gonna run it up to 200-203.

Then wrap in butcher paper and towels before putting it to sleep in the cooler for a couple of hours before slicing.

Pulled off and put to rest for the next 2 hrs Cooked between 225-260 for 11.5hrs the point was at 205° flat at 202° might make burnt ends after resting. My meat and I are tired 😪
