I had to get some pulled pork done by early Friday evening and figured it'd be best to cook overnight. It was an 8 pound butt. Problem was the WSM ran relatively hot at 300-350. I blame it on the door that's not very snug. It's about 15 years old and bent out of shape. I'm looking into a Cajun bandit as we speak.

Put it on around 9pm and unfortunately finished up around 4am.

Last Friday?  The cb door is a must have imo. And I'm anti gadget and accessory. My wsm is much more stable and will shut down quicker. It's well worth it. I got the latch as well.

Looks good to me! Did you use a water pan? Maybe adding one would have helped bring the temp down?

Yes last Friday! Hah should have mentioned that.

I didn't have water in my pan. Maybe that would have helped a tad.

By the way, what was the rub you used here? Good looking bark.

Water definitely helps keeping the temps down. Also, if using the minion method, how many lit coals did you start with? If you started with too many, that could of factored into the high temps as well.
Looking for colored 18's and SJ's.

I agree that the cajun bandit door is a must have. It is made from some heavy gauge stainless steel and seals up 100% better than the factory door. You will not be disappointed.

Probably around 30 coals. I should have used less + water. I guess I thought it wouldn't have been a problem with outside temps in the 30s.

Looks great! Good thing is a pork butt will hold in a cooler for a good couple of hours.
When doing an overnighter on the WSM I like to use water, seems to just stabilize and hold better. If I'm up and watching it I might skip the water, but always for the over night runs.
How did it come out, where them pulled pics!?
