Steak sandwiches and grilled guacamole.

I have been grilling a lot but I keep forgetting to take pics, I finally remembered Saturday.
Seared a chuck eye for the sandwiches and then some strips for the appetizers.

Veggies for the guacamole.

My son serving up the guacamole, chips and strip.
Dogs first in line.
Peppers and onion for the sandwiches.

Sliced and the build.
All was good.
I can't get enough of that grilled guacamole!

Both sandwiches and guacamole looks amazing! Nice setup with all year grilling rain or shine.  Blue SSP and Simpsons look great too.

I can't remember where this recipe originally came from but it's been heavily modified. It's super easy to make, good luck if you try it.

Grilled Guacamole

Ingredients

4 ripe avocados
½ red onion
1 lime
(1 jalapeño pepper optional)
3 Roma tomatoes or 2 plum tomatoes
1 oz lime juice
1 clove minced garlic
1 tablespoon chopped cilantro (much more is better)
¾ teaspoon kosher salt
½ teaspoon cumin
⅛ teaspoon cayenne pepper
Fresh coarse ground pepper to taste.

Directions:
Cut the avocados in half and remove the pit. Cut the onion into round slices, each ½-inch thick. Slice the pepper in half and remove the seeds and veins. Cut the tomatoes and lime in half. Place the prepared vegetables and limes cut side down directly over the coals and grill for five minutes, turning once or until they char and start to soften.

Remove the vegetables from the grill and dice. Combine the diced vegetables, garlic, cilantro, salt, cumin and cayenne pepper into a small bowl and mix vigorously. Serve warm or refrigerate and serve chilled. Warm is best though!
