Best way to cook a 5lb boneless turkey breast?

Success!   Turned out awesome, held temp between 375-400 for the majority of the cook.  Pulled it off at 166 and it was very good, I think next time I would pull it a few degrees earlier.  Total cook time was right at 2 hours.  I had to adjust the vents a little in the very beginning because I was dropping temp and got down to 340.  After that it was smooth sailing.  I am glad it made it to 166 when it did because it looks like I did not have much charcoal left.  Anyway, thanks for all the info and help.  My first turkey breast was a success.  Also, I did not use any wood since the wife says she does not like the flavor.

Awesome results Jeepin!  I didn't even pay attention to it being boneless before.  I've done a boneless once and I did it slow-n-low but with only a few chunks of wood then sliced it with my meat slicer for sandwiches.  It was really good.  I need to check the store the next time I'm there to see if they have any marked down now that the holiday season is over.  Oh man, the outside of that turkey looks so damn good!!!!

Was the meat probe right under the skin? You really want it right in the middle. Still looks pretty damn good. I kinda want one myself now.
Still need a 22" yellow

No it was poked into the middle of the breast.  It showed 166 or 167 when I pulled it and it was definitely done.

I see the angle now. That line in the skin is deceptive. Definitely doing this soon.
