Sous Vide with a Crock pot?

Have never done the sous vide thing, but this made me wonder...could you use the "warm" setting on the crock for a few hours, then go straight to the grill for the sear? I know you still don't know the actual water temp, but at least you would be at a lower temp to start, so over-cooking would be less of a fear. I guess it will require an experiment to find out...
