Best way to cook a spiral ham on a kettle? I figured indirect with a water pan, but is okay to sit ham on grates or use pan?

The only thing you can't cook directly on a grate is a stick of butter!!!!  I'd go indirect or even slow-n-low (225-250) if you want to put a lot of smoke into it!

Check out Webers website in their recipe section. They have a great recipe using apricot preserves, rosemary and some other ingredients. Have a glaze of some sort handy while you're cooking. In a pan or on the grate either way works. I would suggest having a pan underneath if your putting it on the grate. Definitely have a glaze though.

I've done it many times. Just plop the ham on the grates over a drip pan. Charcoal on the other side. Takes about 2 hrs.

What I do is slather the ham with some mustard, then sprinkle a bunch of rub on it.  Put it on the grate pointy end up and let it go. Two hrs later you're done.

I use a pan with pineapple juice and a little applewood smoke.  I also baste a few times during the cook.  That way I know it will not dry out.  Uncut hams work better IMO.

Here's what I did today for ham.  Precooked ham, trimmed fat, indirect using 1 charcoal basket, hickory chunks, directly on the grates, hit 130 brushed on 1/3 cup strawberry fruit spread (not jam) with 2-3 tablespoons of mustard mixed in.  Then about 15 more mins.
