Very handy tool for trimming fat cap and silver skin . The tool features replaceable blades and is sturdy in your hand when your using it .
It  could use a little more side grip but it's not a deal breaker . The company has great customer service and if you order one you'll likely receive a phone call from them with the offer of a tutorial .

I didn't have a Brisket , there's a you tube video of a Brisket trim if your interested , I did have a pork shoulder and used it for a demo .

The tool easily removed the fat and silver skin with no trouble

Working like a  hand held mandolin it slices layer after layer of fat off with razor sharp ease

For $25.00 it's well worth it if you trim a lot of Brisket , it's durable enough you'd never have to replace it

Lol.. when I see things like this I wonder about thought process and how they got to that point. That thing looks like a cheese slicer/safety razor. I wonder if the guy was shaving one day and cut the crap out of himself and thought "I just cut myself like a fatcap." Eureka!

Or..while cutting some cheddar... "I wonder if the wife would be pissed..."
