Wouldn't you want to keep the bones in tact for added flavor and presentation?

The boss has spoken...she wants a whole bird done as a whole bird. "You don't experiment with special days"

Looks like I'm spinning it whole. I will be brining it and I will shield the breasts for about an hour as well. I had thought the weight limit on the roti was 20 lbs but 22 probably wouldn't hurt it anyways.  Not to mention, once I take out the giblets, neck and wingtips to make gravy I'll probably drop below 20 lbs anyways.

It will be fine. Just get the counterweight set right. I buy Butterball turkeys which are already injected. Saves me time with prep. No need to brine them. Have fun and don't let the cook stress you out. Take pics.

The boss just called.

My two cents.

Do the bird whole.

:)

I learned the deconstructed bird from Jacques Pepin

Just have fun

Dude, relax your chicken.

I would show up early to your thanksgiving and make sure I got the prime rib before it was gone. Sounds great. Good luck with the task at hand

If you want the show , the roti will handle 25 lbs , roast with two baskets and a drip/water pan in the center at 325ish for 4-5 hours , you'll have to refuel along the way. Tuck the wings and you know the rest .

Have you done a 25 lber on the roti?

I've cooked turkeys in just about any way you can and every size , there's no difference other than time , what would you like to know ? I know I've done a roti bird or two on here but old posts get deleted over time , there's still other more current threads that cover the topic

Sadly today I had to cave and cook it in the oven. I know, I know, you can bbq in the rain but I did not have the time to fight with it to hold temps today.  Next time I guess.
