Bacon Teriyaki Tuna

This past Sunday, I was fishing on my friend Damons’  boat for Yellowfin Tuna, and we caught a few. Tuna, for me, are a lot of fun to catch, but not my favorite table fare. We mostly eat this stuff uncooked…



Damon told me how he cooked some from his last trip. Wrap a good chunk of tuna with bacon and marinade in teriyaki sauce. That’s exactly what I did.



I did this cook with Stubb's briquettes and a few small apple wood chunks.



The wings were marinated in Walkerswood Jerk Marinade. Wow, that stuff is good!



Ready to go!



I grilled some asparagus and drizzled with this orange balsamic stuff my mom gave me. Plated up and ready to eat. 



The Walkerswood Jerk Chicken was awesome and I will be doing that again real quick! I was a bit skeptical cooking the tuna like that, but was very stoked with how it worked out!

The ride home...

The texture was similar to a meatball wrapped in bacon. The tuna absorbed some bacon fat for sure. To render the bacon like that, the tuna was well done inside, but not super dry like you would expect.

Damn! High quality plate right there. Would love to have some of that fresh tuna. I like it raw or seared rare.

I prefer tuna that way myself, but these tuna were on the small side, so I tried something different. If the tuna were bigger, I would probably have seared them.

This might be the first post I've seen that didn't need a grill

@WNC  Actually, I used my Performer table to take that pic, so a grill was needed!!!  ;D

Awesome! I love tuna, especially raw. Never thought about the bacon wrap... I'll have to try that!
