....from over that past few weeks.
Back ribs:
These were moister and more tender than the picture belies:
Jerked chicken.
Marinated in a combo of dry and wet applications for 2 days then smoked at about 200f till in the low 150's internal then grilled to finish:
Cornish Hen high heat smoked then grilled:
Corn is coated in imitation butter,chipotle mayo and rub. Arugula salad has a reduced strawberry fig balsamic vinaigrette:
Country Ribs. I have only ever seen these as single or double cut ribs and am told it is a pork loin with the bone left on. This was the first slab I found so AFH and I split it:

Nice cookups! Beautiful kettles.
I don't think I have seen country-style ribs cut that way, but the end product sure looks good.

! I just got some jerk rub and have used it once...it was ok, but I cooked indirect medium heat. Will try cooking lower then finishing over direct like you did the next time. Will probably let the rub sit a few days like you did as well. Thanks for the info!!!
