Back ribs at Lightning's place

I was originally going to try doing side ribs since I still haven't figured those out exactly yet but when I got to the store yesterday, I found two packs of back ribs on sale so I got one of those instead so side ribs will have to wait for another time.

I've gotten the ribs trimmed, silver skin removed, and seasoned up with a tangy rub.  Let's see if I've finally figured out posting pictures.





They're now dry brining in the fridge for the next few hours while I make a late lunch and do some errands. Then they'll go into the 22.5" WSM to cook. The plan is to do yard work while they cook so I can keep an eye on the smoker while I get the back yard cleaned up.

The cat's checking out the used Performer I got. Need to clean it up and give it its first cooking session.  The cat's going to take off running for the back door in a couple of minutes when the lawn mower comes out.

Just over two hours in, I'm fooling the ribs. I've never done this before, usually sprayed them to keep them moist.

That's a 22.5 inch Smokey Mountain, or in my case Smokey Driveway.  The heat diffuser is the water pan that sits below the lower food grill (not installed in that picture).

I just took the foil off the ribs:





The meat's so tender that the one rack broke when I put it back on the grill. I poured the drippings in the foil over each rack.  Hopefully some more cooking unwrapped and they'll firm up a bit while I simmer up some sauce.

Almost forgot - every meal needs a good dessert. Now that the sun's been down for a while and the temperature's dropped, freshly baked Reese's Pieces cookies are coming out of the oven:
