Sunday noon and since Steelers don't use to play football on pre-season matches (that team is not the Steelers we love), let's cook something!

Trimming the tenderloin :

Preparing some broccoli and sweet potatoes (potatoes are imported from USA, no local sweet potatoes this time of the year)

Lighting up some briquettes

Loin opened in half, hammered a bit and stuffing on. (Sun dried tomato, olives, thyme, s&p)

It's on

New toy, waaay better than the Chinese crap I bought from eBay. Mavericks are really expensive here in Greece, due to the shipping costs.

Broccoli tossed with yogurt mustard paprika mix and grated hard Greek cheese (something like parmesan). Potatoes semi boiled tossed with olive oil, paprika, s&p and some dried thyme.

Let's rest.

Ready to rock!

Overall a great recipe, we really enjoyed it. Recipe was found on America's test kitchen book - master of the grill.

Cheers,
Myron

Beautiful cook. I'm going to try your stuffing on my next tenderloin.

If you ever get he opportunity, put that on a rotisserie. Unbelievable..

@myron. I did your recipe the other day and it turned out delicious. I added sautéed onions, mushrooms and garlic to the roast and topped it with fresh cilantro, ( cause that's what I had in the fridge). Only thing I might do different next time is add some basil as well. Took the roast to 135ish then seared it for the last little bit. Thanks for the inspiration!
