I found that your best place to find good beef ribs is a meat market. I did a cook yesterday and these were plenty meaty.

Ain't that the truth. Made these twice. First time, lucked out and got some decent ones. Became my girl's favorite. Next time, the ribs weren't even enough for a snack--no meat on them! I don't see the purpose of selling them like that.
Yeah, when I see those naked beef ribs in the supermarket , they look like bones for the dog.....hardly any meat.
Maybe the full short rib packer would be the answer....

What I've done is ask the meat cutter person (regular grocery) to grab the grab the short plate still in the cryopac, before they cut it into 3-4" sections for the short ribs to set out in styro trays.....
Weigh the whole thing & tag it....if you're lucky they might discount the price per lb. 'cause there's less work involved....



just make sure ya got a big piece of charcoal to cook 'em up.....
