PRIAZZO!!!

Back in the 80s, Pizza Hut had a pizza called Priazzo Roma.  It was a deep dish pizza with a top crust and it was DELICIOUS!!!  Didn't last long, but I decided for the contest, I'd try recreating it.  I used my weber gourmet skillet for the pan.  I used garlic dough from the Portland Pie Co.

First the pepperoni:


Next the veggies (sorry out of focus):


Then the hot Italian sausage and sauce:


Cheese (Mozzarella and Provolone):


Then the top crust.  Sealed the edges and pricked it all over with a fork.  This is the shot with more sauce on top and cheese was added to that after:


I used a full chimney of coal divided into three baskets with the skillet in the middle.  Temp ran around 375 to 425 for twenty minutes:

Well done! Gotta get me the pizza stone attachment for my MT. But I'm assuming you used the griddle?

Thanks!  Yep, used the griddle, but I didn't remove the center section from the cooking grate.  I just sat the griddle on top with the three charcoal baskets in a triangular configuration underneath.  Had an extra basket left over, so I thought about elevating it.  Decided against it (seemed too tippy) and the bottom turned out fine.  I liberally wiped the bottom of the griddle with olive oil before I put the bottom crust in the griddle and it slid right out and onto the cutting board easy peasy.

Holy crap, I have finally found a use for the skillet, I have had it for about 2 years and never used it.
I am not a collector, but I do have a small collection.

Jackpot - well done.  I have not tried pizza in my CI Skillet, but this looks real inviting.
